A complex London honey with citrus and herbaceous layers reflecting widely varied forage sources.

DESCRIPTION

Off the beaten track, some lesser-known corners of East London present exceptionally productive spaces for bees to thrive. The Custom House hives collect pollen and nectar from re-wilded former industrial land as well as private and public gardens, long-established tree and bush lines and the margins of Hackney Marshes. Marsh plants such as Water Mint are especially loved by the bees and lend bright herbaceous notes to this rich honey.

TASTING NOTES

Colour: Deep amber.
Nose: Warm, spicy.
Viscosity: Light
Flavour Notes: Muscovado, citrus, vine fruits, green herbals.
Pairing ideas: Porridge, toast (especially sourdough.) Good for baking/ drizzling and with yoghurt and young goat or sheep cheeses. Delicious in fresh fruit salads, poached summer fruit or dried fruit compotes.
Cocktails:
Loves whisky and gin pairings. Excellent in mulled wine, beer or cider.

PRODUCT INFORMATION

A rich single-source honey from East London’s Docklands area where significant re-wilding underpins the wide variety of pollen and nectar sources that honeybees need for optimal health and the production of characterful honey. Only their surplus honey is ever harvested, leaving the colony with plentiful winter stores. The honey is extracted using a simple centrifuge. Never blended or heated above the natural hive temperature, it is minimally filtered in a traditional process that removes excess wax whilst preserving all of the honey’s natural flavours, aromatics and micro-nutrients including the pollens.

On the palate there are floral hints aplenty with elderflower coming through but the flavour develops to become more complex with fudgey flavours coming through too. It's fresh yet warming and lingers on the palate with fabulous flavour nuances, great length and a certain amount of charm. This is a beautiful product"
