The Custom House hives collect pollen and nectar from re-wilded former industrial land as well as private and public gardens, long-established tree and bush lines and the margins of Hackney Marshes. Marsh plants such as Water Mint are especially loved by the bees and lend bright herbaceous notes to this rich honey.
Nose: Warm, spicy.
Flavour Notes: Muscovado, citrus, vine fruits, green herbals.
Pairing ideas: Porridge, toast (especially sourdough.) Good for baking/ drizzling and with yoghurt and young goat or sheep cheeses. Delicious in fresh fruit salads, poached summer fruit or dried fruit compotes.
Cocktails: Loves whisky and gin pairings. Excellent in mulled wine, beer or cider.
