Castelines Noir Organic Black Olive Oil

To make this unusual oil, Castelines have returned to the typical practices of the oil producers of the Vallée des Baux, in which the olives are stored for a time after harvesting and before pressing to allow some fermentation, thus producing an oil with strong flavours of black olives. Technically this is a fault, so the oil has to be classed as virgin, not extra virgin. It has been a great hit with chefs across the world as a unique and delicious ingredient. Use with new potatoes or fish.
Tasting notes: Sweet and well-rounded, with pungent aromas of black olives and some vanilla and mushroom undertones. No piquancy or bitterness.
