A mysteriously smoky and intense honey combining citrus-like sweetness with umami glimpses.

DESCRIPTION

An intriguingly strong and characterful honey made by hives situated on an abandoned herb farm surrounded by established woodland, open farmland and estuarine forage. The bees create their own blend from this rich mosaic and year after year their honey includes a unique smoky note, the floral source of which no-one can quite explain. It makes this varietal the perfect culinary partner to many other umami flavours.

Nose: Smoky tea
Viscosity: Mid
Flavour Notes: Ripe mandarin orange and fig mellowing to herbals with aromatic cigar-smoke finish.
Pairing ideas: Dressings and glazes for hams and chargrilled/ barbequed pork, chicken, mushrooms and peppers. Use in salad dressings to highlight earthy flavours like beetroot.
Cocktails:
Bartender favourite for pairing with dark rums and bourbons.

PRODUCT INFORMATION

Above all else, the health of honeybees comes from the richness and variety of their forage. The extraordinary combination of wild and cultivated flora available to these bees supports the vigour of these hives and is reflected in the complexity of the honey. Only their surplus production is ever harvested, leaving the colony with plentiful winter stores. The honey is extracted using a simple centrifuge. Never blended or heated above the natural hive temperature, it is minimally filtered in a traditional process that removes excess wax whilst preserving all of the honey’s natural flavours, aromatics and micro-nutrients including the pollens.
