An intriguingly strong and characterful honey made by hives situated on an abandoned herb farm surrounded by established woodland, open farmland and estuarine forage. The bees create their own blend from this rich mosaic and year after year their honey includes a unique smoky note, the floral source of which no-one can quite explain. It makes this varietal the perfect culinary partner to many other umami flavours.
Nose: Smoky tea
Flavour Notes: Ripe mandarin orange and fig mellowing to herbals with aromatic cigar-smoke finish.
Pairing ideas: Dressings and glazes for hams and chargrilled/ barbequed pork, chicken, mushrooms and peppers. Use in salad dressings to highlight earthy flavours like beetroot.
Cocktails: Bartender favourite for pairing with dark rums and bourbons.
