Bermondsey Street Bees ‘Union Collection’ Ling Heather Creamed Somerset Raw Honey 330g

(1 customer review)

£14.00

A creamed Somerset Ling Heather with a velvety mouthfeel enhancing its classic bittersweet flavours.

DESCRIPTION

Ling Heather is held to be the greatest of all Britain’s native honeys and this is a classic example of prized high-altitude Ling, from hives taken up to the Somerset moors at the end of summer. This particular crop has been creamed, a traditional process which breaks up Ling’s large crystalline structure into a fine textured honey with a creamy appearance. The production of Ling heather honey has been carried on through centuries and requires specialist management of both the hives and the extraction process.

PRODUCT INFORMATION

Purists seek out fine monofloral Ling from high- altitude moors, such as the area this honey comes from. Different moors produce differentiated Ling honeys (reflecting local subsoils and minerality) and like fine wines, are easily recognised by experts. Ling has been cherished for centuries for its characteristic bittersweet aromatic flavours, which shine through the creamy mouthfeel of this honey. The art of heather honey, from taking strong hives up to the heather at the end of summer to the unique extraction techniques, is a specialist beekeeping craft… and is often not rewarded by a harvest, making this a particularly rare and special British foodstuff.

Guild of Fine Foods Judges Comments:

"This is an almost frothy honey, well aeriated. The mouthfeel is initially grainy but it melts readily. This melt develops wave after wave of flavours, some floral, some more earthy with a hint of bitter metallic arbutus-like notes. The finish is a bold mix of honey sweetness"

"There is a wonderful texture to this creamed honey, smooth with just a hint of graininess and an almost aerated lightness. Initial sweet characterful honey taste is followed by the unique slightly bitter note typical of ling. That metallic note won't be for everyone but it does bring interest and contrast. A lingering flavour with the bitterness slightly overtaking the sweetness."

"Rich and creamy looking honey with a enticing heather aroma. Caramel and paste like initially on the palate, dissolving to reveal earthy, wood like flavours and finishing with the floral heather. This is a delicious honey that takes you on a journey. Never overly aggressive, always gentle but clear and clean on the palate."

This lovely honey is perfect on the sweetness scale, has some mild and delicate floral undertones which I have found it to be an absolute pleasure on toast among other tasty treats. It has a beautiful texture which I can only describe as similar to a whipped mildly grainy mousse, melts in mouth… all in all heavenly. Upon receiving this honey I was delighted to find a little booklet of planting for bees what an added treat full of information and tips and beautifully curated.
