DESCRIPTION
Ling Heather is held to be the greatest of all Britain’s native honeys and this is a classic example of prized high-altitude Ling, from hives taken up to the Somerset moors at the end of summer. This particular crop has been creamed, a traditional process which breaks up Ling’s large crystalline structure into a fine textured honey with a creamy appearance. The production of Ling heather honey has been carried on through centuries and requires specialist management of both the hives and the extraction process.
TASTING NOTES
Nose: Heather blossom, leather, sea breeze
Viscosity: Thick, with fine granulation
Flavour Notes: Classic bittersweet flavours built from potent blossom notes with underlying heather-twiggy and medicinal herbal aromatics
Pairing ideas: Porridge, toast, cheese scones. A relish in itself, try with hard or soft native British cheeses and charcuterie.
Cocktails: A must for hot whisky or gin Toddy

This lovely honey is perfect on the sweetness scale, has some mild and delicate floral undertones which I have found it to be an absolute pleasure on toast among other tasty treats. It has a beautiful texture which I can only describe as similar to a whipped mildly grainy mousse, melts in mouth… all in all heavenly. Upon receiving this honey I was delighted to find a little booklet of planting for bees what an added treat full of information and tips and beautifully curated.
