A light and delicate honey with candied notes including distinctive qualities of cider apples and pear.

DESCRIPTION

Blake Hall is a charming 18th Century stately home in Essex, surrounded by a working country estate with woodland and open farmland. The hives are situated in the Victorian walled orchard and notes of apple and pear sing through the delicate golden honey they produce.

TASTING NOTES

Colour: Light - Mid Amber
Nose: Delicate florals.
Viscosity: Light
Flavour Notes: Vine fruit elements and distinct notes of cider apple and pear.
Pairing ideas: Porridge, toast, herb and fruit teas. Fresh cream cheeses like ricotta and labneh. Drizzle on ice cream or fruit salads. Add to cheeseboards as dip for fresh apple sections.

PRODUCT INFORMATION

Open farmland can pose special challenges to honeybees. Monocultural production, with a single crop stretching for miles in any direction, may feed the hives when in flower, allowing the colony to build up strongly. However, once flowering is over, there may be no other viable source of forage available within flying distance. This leaves the bees to starve. It is essential therefore, that country bees be able to access seasonal mixed forage such as we see at Blake Hall, which combines the orchard, house and kitchen gardens, managed and wild woodland and field crops. Only the surplus honey is ever harvested, leaving the colony with plentiful winter stores. The honey is extracted using a simple centrifuge. Never blended or heated above the natural hive temperature, it is minimally filtered in a traditional process that removes excess wax whilst preserving all of the honey’s natural flavours, aromatics and micro-nutrients including the pollens.
