European Acacia is an elegant monofloral with relatively uncomplicated flavours. Distinguished by a deliciously silky mouthfeel and ability to always remain liquid, it is much loved by pastry chefs and is indisputably one of the world’s classic honeys. This example comes from the Loire Valley in France produced by beekeepers with a long family connection to Bermondsey Street Bees. It is the only non-English honey that they list.
Viscosity: Mid. Always liquid; will never set.
Flavour Notes: Extra-sweet, with baked pear and boiled sweet flavours.
Pairing ideas: Porridge, toast, yoghurt, herb teas. The classic honey of pastry chefs, drizzled onto pastries, desserts and cream cheeses. Deeper notes emerge with nuts, goats’ cheese or moist blues. Delightful with coconut and for making honey mustard and vinaigrettes.
